PunjaBee Halloumi wraps

Stir fried vegetables and halloumi served with a spicy mayo in a wrap or pitta

I was introduced to Halloumi when my daughter and son in law started their own restaurant business a few years back.  Being vegetarians, they had the most amazing vegetarian dishes on their menu and Halloumi wraps was one I tried on one of my many visits.  I have tried to recreate them just as they made them – however, feel free to use any vegetables you like and serve with a side of my spicy Punjabee Aloo and some fresh homemade coleslaw.  They will go down a treat with family and friends.

Ingredients – serves 4

8 whole-wheat wraps

1 tbsp oil

2 slabs of halloumi – sliced but not too thinly

1 large thinly sliced onion

3 bell peppers sliced lengthways

Green chillies to taste

8-12 sliced mushrooms

1 teaspoon garlic granules

Salt to taste

1 teaspoon kashmiri chilli – optional

1 teaspoon garam masala

2 heaped tbsp mayonnaise

Hot pepper sauce to your taste

  1. Fry the halloumi slices in a drizzle of oil until slightly browned then remove and keep aside in a warm oven
  2. In the same pan fry the onions in a tablespoon of oil until softened and with a golden tinge
  3. Add the peppers and mushrooms and stir fry on a medium heat for 5 minutes
  4. Stir in the garlic granules, salt, garam masala, green chillies and kashmiri chilli if using
  5. Cover and cook for a further 5-6 minutes on a low heat
  6. In a bowl mix the mayonnaise with the hot sauce
  7. Warm a wrap on a non-stick frying pan or tawa and layer in the middle with the pepper and onion mix, the hot pepper mayo, then slices of the halloumi – top with further mayo, fold and serve
