Baked beans stir fried in a little spice
Masala beans are the most-eaten type of beans in my family. They can be eaten on toast, with an omelette, with roti, you name it they make the perfect accompaniment to any meal. We have had these with sausage and mash, fishfingers, the list is endless.
The thing about my family is as soon as they get the aroma of onions frying coming from the kitchen – they get excited about what may be cooking. Regardless, they love these and I do not believe there is a Punjabi family that does not eat their beans like this. My dad used to slice up sausages and stir fry them in the onion and chilli until cooked and then add the beans – a really delicious variation.
They literally take 10 minutes to cook – so great for lazy days or when you are short of time. This recipe feeds 5
Ingredients
Preparation time 5 mins, cooking time 5 minutes
2 tins of baked beans in tomato sauce
50g butter (or a knob of butter) use oil if you wish
1 medium onion diced
2 green chillies finely chopped
Half teaspoon salt
Half teaspoon garam masala
Method
- Melt the butter in a frying pan and add the onion
- Stir fry until golden
- Add the chillies and fry for a further minute
- Add the beans stirring well and sprinkle on the garam masala
- Serve with toast, eggs, sausages, fishfingers – whatever you like
